• Heat oil in a wide pan.
• Add cumin and let splutter; add asafoetida.
• Stir in turmeric (2–3 sec).
• Add mamra, roast 3–4 min till crisp.
• Sprinkle chili powder, sugar, salt; mix well.
• Cool and store airtight.

Part 2 – Bhel Puri (Street-Style)

1. In a large mixing bowl, combine onion, tomato, potato, peanuts, and green chilies.
2. Add spiced mamra, sev, and crushed puris.
3. Drizzle with tamarind chutney, green chutney, and lemon juice.
